This is a place to share our favorite recipes. As we learn new local sustainable recipes, let's share them. If someone brings something yummy to a potluck, ask them for the recipe and post it here.
Lyndsey Rose's yummy salad (May 2008)
purple cabbage, shredded
carrots, julienned
collard greens, julienned
red onion, julienned
tomatoes, cubed (substitute sun dried during the off-season)
whatever fresh herbs are available (cilantro, basil, parsley...)
walnuts
-during the summer I go to farmers markets and put all kinds of fresh veggies in this salad- anything and everything works
dressing:
Olive oil
lemon juice
minced garlic
Nama Shoyo or tamari
sea salt
cumin
-this dressing is awesome and I usually make enough to last me a few days. The exact proportions of ingredients will vary according to your own taste. I put massive amounts of garlic in mine, but that doesn't appeal to all so play around with it.
topping:
raw pumpkin seeds
raw sesame seeds
cumin seeds
to roast: In heated skillet, add about 1 T oil, roast pumpkin seeds for about 2 minutes, then add other seeds and toast for another 2-4 minutes, until light brown. Salt to taste.
